3 Best Vitamix Soup Recipes
We love soups because they’re great, delicious, comfort food and they’re generally pretty easy to prepare.
We also love our Vitamix because it’s a blender that does more than just blend smoothies. We’ve been using it for a while and wanted to share the best Vitamix soup recipes. They’re also super nutritious and healthy for the entire family.
Each of these soup recipes should take no more than 20 minutes in a Vitamix and 30 on the stove top with a regular blender.
Here are our three favorite soups that you can make any time of the year
#1 Tomato Basil Soup
Ingredients
- 1 28-ouncecan whole, peeled tomatoes
- ½ cup of chicken, beef or vegetable broth
- 1/4-1/2 cup of heavy cream
- 1/2 cup of fresh basil (no stems)
- ½ garlic clove
- ¼ teaspoon chopped fresh thyme
- 1/8 teaspoon chopped fresh rosemary
- 1/8 dried oregano >
- ½ tablespoon tomato paste
- ¾ teaspoon sugar or 1 teaspoon of honey
- Salt and freshly ground black pepper to taste
Instructions
- Place the tomatoes (plus their juices), broth, garlic, thyme, rosemary, oregano, tomato paste and sugar/honey in a blender. Season with salt and pepper.
- Turn the machine on and gradually increase the speed to high. Blend until completely smooth. If you’re using a Vitamix, continue blending for another 6 minutes until the soup is hot and steam begins to escape from the lid.
- If you’re using a regular blender, transfer the soup to a pot and bring it to a boil. Reduce the heat to a simmer and cook, stirring occasionally for 8-10 minutes.
- Add the heavy cream to the soup. If using a high-speed blender, blend until warmed through, about 5 seconds. If using the stovetop, stir into the soup until it’s well distributed.
- Taste and season with more salt and pepper as needed.
