Below we’ll share out steps on how to make baked tin foil shrimp scampi. This recipe serves 6 persons.
Ingredients Needed
- 2 pounds of raw shrimp (deshelled)
- 1 stick of butter (sliced)
- 1/2 cup of dry white wine
- 1/2 cup of chopped or minced garlic
- 1/4 cup of olive oil
- Salt and Pepper to taste
- Large sheet of tin or aluminum foil
- 1 Gallon zip-lock bag (if you decide to marinate the shrimp scampi prior to cooking or taking with you on a camping trip)
Sides
- Salad packs with a dressing of choice
- Steamed Rice (can be cooked in a pressure cooker or rice cooker)
Step 1: Pre-heat your oven or grill to 375 degrees Fahrenheit.
This should take around 8-10 minutes to fully heat.
Step 2: Wash and pat dry your shrimp.
Rinse your shrimp and use paper towels to pat it dry.
Step 2: Mix the shrimp, butter, garlic, olive oil, and wine in a mixing bowl.
Place the shrimp, butter, garlic, olive oil, and wine into a large mixing bowl. Use a mixing spoon to spread the ingredients around evenly. There will be chunks of butter and that is OK.
If you decide to prep your tin foil shrimp scampi for a camping trip, we recommend mixing everything in a gallon sized zip-lock bag and marinating it overnight in the fridge.
Step 3: Place your shrimp into tin foil.
Tear a large sheet of tin foil and place the shrimp into the tin foil.
Step 4: Completely enclose the shrimp in tin foil so that none of it is exposed.
Make sure none of the shrimp is exposed so that heat is trapped into the foil as it cooks.
Step 6: Cook the shrimp in your oven or grill for 12-14 minutes until the shrimp is firm.
We recommend checking your shrimp at the 10-minute mark and allowing more cooking time if needed.
Fish and seafood cooking times are shorter because the connective tissue that holds them together is much thinner.
The shrimp should no longer be grey and opaque when they are done cooking. Be careful to not cook the shrimp for too long because it can become tough and rubbery.
Step 7: Serve with a side of rice and salad.
We like to layer it like the photo below. We placed a layer of salad on the bottom, topped it with rice, and then placed the shrimp scampi on top.
Season with some salt and pepper and you’re ready to eat a healthy and scrumptious meal! A glass of white wine is also encouraged.
